Come to The Evergreen in the Delta Banff Royal Canadian Lodge for an elegant dinner of espresso pork elk medallions, quail with late harvest Riesling reduction, Manitoba pickerel with truffle oil or a warm Niçoise salad. Keep your meal all-Canadian and choose a VQA label wine from their excellent list. Their morning menu features omelettes and fresh fruit pancakes.
